Cut one passion fruit in half and scoop the pulp into a shaker. Add 2 oz vanilla vodka, ½ oz Passoa, ½ oz passion fruit purée, ½ oz lime juice and ¼ oz sugar syrup with ice. Shake hard, double-strain into a chilled coupe, and serve with a small glass of cold Prosecco on the side.
