Muddle 6-8 mint leaves with ¾ oz simple syrup and ¾ oz fresh lime juice in a copper mug or highball. Add 1½ oz dry gin and crushed ice, then top with ginger beer. Stir from the bottom up and garnish with a mint sprig and lime wedge.
